I'm back today with another fabulous recipe inspired by Weight Watchers. This recipe is only 4 points per serving and is super garlicky and delicious…I like to serve it with a fresh tossed salad!
First, gather together all your ingredients:
I like to buy peeled and deveined shrimp to keep it really easy…wash and dry shrimp and place in an even layer in a baking dish.
Mix together the next 8 ingredients:
Next, pour the mixture on top of the shrimp…
If you are preparing this recipe ahead of time (this recipe is fabulous for entertaining or a busy night), you could stop here, cover it with plastic wrap and pop it in the fridge until just before dinner, if not, go ahead and mix together the last two ingredients: Parmesean cheese and Panko Bread Crumbs:
this is what will add that flavorful, crispy topping to the lemony-garlicky shrimp! (If you are REALLY being good, use Reduced Fat Parmesean Cheese).
Cover the top of the shrimp with this mixture
Now, simply bake the dish at 425 degrees for 8-10 minutes, until shrimp are cooked through and the top is golden brown.
It's also nice to prepare this in individual serving dishes…and I ALWAYS top it with fresh chopped Italian parsley…
Serve with a big tossed salad and some fresh bread (Disclaimer: the bread is NOT on Weight Watchers, but tastes REALLY yummy when used to mop up any leftover sauce.)

Baked Shrimp Scampi
1 lb. uncooked shrimp, peeled and deveined
1/4 cup of fresh squeezed lemon juice
2 tbsp olive oil
4 garlic cloves minced
1/4 cup minced shallots
1 tsp lemon zest
1 tsp salt
1/4 tsp black pepper
1/4 tsp crushed red pepper flakes
2 tbsp reduced fat Parmesean Cheese
1/4 cup Panko breadcrumbs
chopped fresh parlsey for garnish
Preheat oven to 425 degrees.
Spray a 13 x9 baking dish with cooking spray
Lay shrimp in a single layer in baking dish.
In a medium bowl, combine next 8 ingredients and pour mixture over shrimp.
Mix together cheese and breadcrumbs and sprinkle topping over shrimp.
Bake at 425 degrees for 8-10 minutes until shrimp are done.
Sprinkle with chopped parsley and serve immediately.
