Almost every week, we have “Meatless Mondays” where I fix an easy vegetarian meal…and usually its a salad and baked potato or soup and salad- but very often, since it’s my most-favorite, I fix a big platter of individual wedge salads.
(By the way, I am fully aware that it is chilly and feeling like fall everywhere but here in Florida, where our temperatures are still in the high 80’s, but this cool refreshing salad still tastes great to me!!)
I love the crunch of the iceberg lettuce with the creamy dressing- I often make it with homemade ranch or caesar and top it with yummy things like chopped tomatoes, onion, cheese (maybe a few bacon bits-ok, so it’s a “mostly meatless” dish)! These are so easy to make and look great for a party or dinner…wedge salads are great when paired with a big stuffed baked potato OR even alongside a lovely grilled steak.
