I love a delicious soup in the winter, recently I found a recipe for Shrimp and Corn Bisque and I decided to give it a try…it was good, but I wound up TWEAKING the recipe a bit, and the result is DELICIOUS!
Here are some of the ingredients you will need, I can’t wait until Florida corn is in season, it will make the recipe even better!
Shrimp and corn are truly two of my favorite ingredients!
The recipe also starts with a little bacon, which makes EVERYTHING taste great!
After browning some chopped bacon in your stock pot, remove it to drain,
Next, you saute the shrimp, corn and onions (seperately) until cooked.
After everything this is cooked, you will deglaze the pot with a splash or two of white wine, add the flour and cayenne pepper and pour in the half-and-half.
After adding the half and half, you can return the shrimp to the soup and add the shredded cheddar cheese.
Important to remember: do not bring the bisque to a boil, or the soup will curdle, you just want to heat everything slowly and let the flavors combine well.
I like to top the soup with a garnish of bacon bits and chopped fresh chives, not only do they look great, it tastes delicious!
I hope you try this one- it’s yummy in the winter as a light lunch or dinner; it’s also great in the summer when the corn and shrimp are in season!
