Starfish Cottage Pound Cake with Key Lime Glaze

Just popping in today to share with you all a classic Starfish Cottage recipe: Pound Cake with Key Lime Glaze.  The photos from this post are old and not great, but this recipe is still so wonderful, you just have to try it sometime…

The ingredients are simple and the recipe is easy- but the Key Lime Glaze gives it a great Florida twist and puts it over the top!

I start with my all-time favorite pound cake recipe, the printable recipe is linked at the end of this post.

It uses basic ingredients like flour, sugar, butter, eggs, but the cream cheese makes it so rich and creamy!

You start by mixing together the room temperature butter and cream cheese- don’t forget to allow plenty of time for these ingredients to come to room temperature!

Next you will add some of the dry ingredients and one of my favorites…

Almond Extract!  If you don’t have almond extract, vanilla is great too!

Sometimes I like to bake the pound cake in a bundt pan, or this recipe will make 2 loaf-size pound cakes.

Be sure to butter and flour your pans so the cake actually comes out!!!

Here it is baking in the oven…it smells so great!

When the cake is done, allow it to fully cool on a baking rack, then place it on a pretty cake stand if you have one.  Since the cake will rise qite a bit in the oven, I usually have to cut a bit off the bottom so it will sit evenly on the plate…

For the Key Lime Glaze, all you will need lime juice and confectioners sugar…

You can use fresh squeezed lime juice or you could use REAL Key Lime Juice- I personally love Nelly and Joe’s for a more “authenic” key lime glaze.

I always like to sift the confectioners sugar before stirring in the juice, to make it especially smooth.

After mixing up the glaze- I like mine to be thick and opaque, I pour it on top of the pound cake and let it drizzle and drip down the sides…

It’s fun to to watch it slowly drip down the sides…

Serve your cake with fresh strawberries on the side and a twist of lime.

This is such a delicious treat- give it a try sometime!  It’s the perfect finish to a light meal, or with tea or coffee.  Since I will probably be starting Weight Watchers again soon, I will have to enjoy it now while I can…
