We love to grill around here, in fact- we fire up the grill at least once a week! This is a favorite recipe and super easy…
After chopping everything, you get this amazing super fresh sauce!
Sprinkle the steak with taco seasoning liberally on both sides.
You really can use any steak, but this time, I used skirt steak.
For an easy side dish, toss a bunch of asparagus in a ziplock bag with 2-3 tablespoons of olive oil and salt and pepper.
A fresh squeeze of lime or lemon will add the last touch of bright flavor…enjoy!
Starfish Cottage Steak with Chimmichurri-
(Adapted from Weight Watchers)
1/4 cup lightly packed chopped fresh cilantro
1/4 cup lightly packed chopped fresh parsley
1 garlic clove, minced
2 tblsp red wine vinegar
1 tblsp olive oil
1 tspn salt
1/4 tsp crushed red pepper
1 tblsp taco seasoning
1 (1 1/4 lb) flank steak or flap steak
Combine cilantro, parsley, garlic, vinegar, oil, salt and crushed red pepper in a small bowl and set aside or refrigerate up to 4 hours.
Preheat grill. Rub taco seasoning on steak then grill to desired doneness.
Remove steak from grill and cover with foil, let it rest for 5 minutes.
Top steak with chimichurri and serve.
