This dish is so easy to make and so delicious- we love to grill, and this is a wonderful alternative to burgers or chicken or steak….You will need fresh lemons, olive oil, garlic, rosemary, salt, pepper and a rack of Frenched Lamb Chops (I buy mine at Sam’s Club and they are great!)First step is to make a simple lemon vinagrette for the marinade- Just stir together fresh squeezed lemon juice (I like to zest my lemon as well as juice it) finely chopped rosemary and garlic, olive oil, salt and pepper.Next, I slice the rack of lamb into into individual lamp chops- I like to call them lollipop lamb chops, since they are petite and you can easily pick them up.Then you simply toss the chops and marinade into a zip top plastic bag and let them marinate for a few hours to overnight.Finally, throw them on the grill for a couple minutes on each side until cooked through and golden brown.
I like to serve them on a large platter with a few sprigs of fresh rosemary (a sliced lemon would have looked nice as well!)Your lamp chops will be moist and tender and sooo yummy- give this recipe a try sometime!!
