With Valentines around the corner, I decided to try baking a sweet treat for the family called “Naked Cake” (and no, I was NOT naked when I baked the cake!!) A “naked cake” is a tiered cake that is sparsely frosted on the sides, but generously frosted and beautifully decorated on the top with flowers or fruit. They are sort of popular now, here is one I really like:
Since it’s springtime here in Florida and the strawberries are in season, I grabbed my favorite little helper and headed to the “U Pick” garden near our home…
We are so lucky to live less than 5 minutes from a beautiful organic hydro farm, and it’s always fun to go and pick our own food!
We headed home with a bunch of fresh strawberries (and lettuces and herbs and kale and homemade berry vinagrette- but more on all that in another post!) After a little mixing and baking, I came up with this beauty:
I used a few white box cake mixes (lets be real here, I’m not a top-chef-award-winning baker, so I love shortcuts like box cake mixes) and baked three 9 inch cakes and one 5 inch cake. Then, I stacked them up on my cake plate and frosted the whole thing with a creamy vanilla frosting. Then came the fun part- decorating! I topped my simple vanilla cake with a sweet little arrangement of long stem strawberries, leaves and flowers.
I have always loved little “strawberry flowers” and decided to bring a few flowers and leaves home to decorate with…it turned out so cute…not too bad for a simple box cake!
While baking, I enlisted another little helper to frost and decorate the small 5″ cake…
She chose pink strawberry frosting and used fresh sliced strawberries on top- with a few sprinkles for fun!
Don’t you love it when cakes have a homey-homemade look…they have so much more charm than store-bought cakes!
Me and my assistants had a wonderful time and Vic was a very happy and willing taste tester!
