Fix and Freeze Fajitas

Here is another fabulous fix-and-freeze recipe that is so healthy and delicious- it has quickly become a new family favorite- "Fix and Freeze Chicken Fajitas":  All you need are some peppers, onion, garlic, limes, oregano, cumin, olive oil and boneless chicken breasts…

 This recipe is soo easy, and soo fast that it's almost not a recipe at all…I LOVE meals like that!

 Cut your peppers and onions into strips and toss into a ziploc bag.

Next, squeeze the juice from 2 limes into the bag along with a glug or two of olive oil and a dash of cumin and oregano.  Also add a minced clove of garlic.  At this point, you can toss the bags in the freezer for another day, or let it marinate in the fridge for a few hours.

  I like to make a two bags at a time…one for dinner that night and one for later (for my "please-be- more-specific-recipe" people out there, one red pepper, one green pepper, one yellow onion and one package of chicken tenders made 2 bags for 2 servings each, or it would make 1 large bag for 4 people!)

When you are ready toss the mixture into a hot skillet with another glug of olive oil.  (Defrost the bag overnight in the fridge if it has been frozen).  Simply "stir-fry" until the chicken is done and the peppers and onions start to caramalize,

 Then, fill some tortillas with your yummy concoction- add a squeeze of fresh lime juice and top with your favorite toppings: avacado, sour cream, salsa…whatever you like!

I can't think of a healthier, easier, yummier dinner!  Well, yes I can…what if you took the same ingredients- chicken, peppers, onions and did an "Asian" stir-fry version?  With a soy marinade and served on top of steamed rice topped with sesame seeds…ok, now I am getting carried away…I will have to let you know how the "Asian" version of the recipe turns out!
