I am back today with another fast and fabulous weeknight dinner idea- that you can make with my Fix and Freeze Grilled Chicken Strips! There are so many wonderful dinners you can make with these chicken strips as your starter… fajitas, salads, wraps, pizza, but today I wanted to share with you a favorite PASTA recipe.

For my Summer Vegetable and Grilled Chicken Pesto Pasta , you will need:
Grilled chicken strips (defrosted), zucchini, yellow squash, red onion, garlic, olive oil, salt and pepper, pesto, parmesean cheese and penne pasta.
Right now, our local farm stand has the most beautiful squashes and zucchinis and that is what inspired this recipe!
First, I prepare a large pot of boiling water to cook the pasta, while the pasta is cooking, chop up all the veggies into bite sized pieces and mince two cloves of garlic.
Next, sautee your chicken and veggies in olive oil with the minced garlic and salt and pepper.
While the veggies are cooking, chop the grilled chicken strips into bite sized pieces and add to the sautee pan to reheat
Then pour the chicken and veggie mixture into the pot of pasta and stir to combine. Add a generous serving of parmesean cheese as well!
By the way, let me fill you in on a little trick:
When you are watching your carbs (say you are on a diet or something, but you still CRAVE pasta, this is a purely hypothetical situation of course!) you can still enjoy pasta, but the secret is: HALF your portion of pasta and top it with a DOUBLE your portion of protien/veggies- that way you fill up on protein and veggies, NOT carbs!!
