Just wanted to share with you all a favorite recipe here at Starfish Cottage called Cilantro Lime Shrimp.
Around here, we love us some “South-of-the-Border” flavor, we also happen to love shrimp, so this recipe is perfect and it couldn’t be simpler…
The ingredients include: fresh cilantro, lime, olive oil, garlic, cumin, salt and pepper…
and of course, shrimp. I like to buy jumbo shrimp that is already peeled and deveined- just defrost, rinse and dry well.
Next, liberally season with the salt, pepper and cumin.
You will also need to chop the cilantro and garlic, and juice the lime.
Heat the olive oil in the pan and saute the shrimp until almost cooked.
Then add the chopped garlic, cilantro and lime juice- give everything a big stir to combine the flavors.
There are so many fabulous ways to serve the shrimp, like on top of a bed of Cilantro Lime Rice, or as a shrimp taco- topped with fresh pico and guacamole, or try them chilled on a salad or in a wrap…however you serve it, it’s delicious!!
