This month is all about late summer and the cottage is filled with pops of sunny yellow decor, so I decided to share a favorite salad featuring a delicious lemon vinagrette!
This salad is so easy to make, Victor helped me out in the kitchen…
He loves to cook and squeezing lemons is one of his favorite things to do!
All you need for the dressing is fresh lemons (and a really good lemon squeezer like Vic!!), olive oil, dijon mustards (I like mixing regular dijon and coarse grain) and a dash of salt and pepper.
Just mix everything together- as you may have guessed, I rarely measure things- just add as much as tastes good to you!
For the salad, I like arugula, chopped grilled chicken, sliced almonds, shaved parmesean cheese, and a sliced lemons.
Combine everything in a large bowl, toss in the lemon vinagrette and garnish with the lemon slices.
I always add a sprinkle of grated cheese as well!
This salad is crisp and refreshing- perfect for a late summer dinner, its also nice as a side salad if you omit the chicken…anyways, I hope you make it!
For those of you that can’t get enough Victor updates…he’s doing great! Just started 1st grade and a new soccer team…such a happy sweet boy.
